Paleo Chocolate Chip Cookies

I can honestly blame chocolate chip cookies for helping me go Paleo. It’s sad really, but my addiction to sweets has been at least a little helpful to me.  I was searching for great gluten-free chocolate chip cookie recipes, and found one that was moderately decent…but it was Paleo.

I had never heard of Paleo before. But Almond Flour was carried in bulk at Winco, so I thought, why not?

That was my first introduction to Paleo Baking, and how superior Paleo baked goods are to gluten-free baked goods.

Needless to say, I fell in love.

I’ve made many cookie recipes since then (including an AIP-friendly, Paleo “Oatmeal” Cookie), but I keep coming back to my favorite chocolate chip cookie recipe because…chocolate.

I recently stopped at Costco to pick up my favorite Honeyville Almond Flour (the best on the market!) only to find it replaced with a new brand! Costco is now carrying Blue Diamond Almond Flour, and it is distributed through Honeyville. Which means….it’s the same thing as before! I was getting concerned that I would have lost my favorite flour to work with! I bought a bag and compared it to the last spoonfuls of my Honeyville Almond Flour and it has the same grain and texture.

Whew.

I feel like a dodged a bullet there.

I am in heaven with this flour.

Well, I will be when I finish reintroducing almonds (which is going well–I haven’t had any reactions from the little nuts!). And I’m going to make these paleo chocolate chip cookies ASAP when I know that I can tolerate the almonds again.

For those of you who are AIP, you might just want to pin this recipe on Pinterest for later. It’s worth it. You can make some minor adjustments to make it more compliant, but once you’ve introduced almonds, eggs, and chocolate this is safe to eat. I recommend checking out my conversion charts if you do need to substitute, but here’s a basic idea of what that would look like:

Here’s an idea for substituting for AIP:

Almond flour= equal amounts tigernut flour

Eggs=1 tbs gelatin + 1/4 cup water for each egg

Chocolate chips=equal amounts of carob chips)

Paleo Chocolate Chip Cookies

Ingredients:

Instructions:

  1. Preheat the oven to 325 degrees.
  2. Melt coconut oil on stovetop.
  3. While coconut is melting, combine all dry ingredients using a whisk in a medium bowl.
  4. Using a smaller bowl, crack egg and whisk until uniform in color. Whisk in agave, vanilla, and melted coconut oil.
  5. Finally, combine wet ingredients with dry ingredients and mix together. Let chill in refrigerator for 15-30 minutes (can leave over night as well).
  6. Cover a baking sheet with parchment paper. Drop dough onto parchment paper either by using a melon baller or a tablespoon measuring spoon. Cookie balls should be relatively smaller because they spread out quite a bit.
  7. Bake in oven for 7-10 minutes. Cookie should look slightly doughy, but the bottoms will be browned.
  8. Let cool 10 minutes so that cookies can finish baking while cooling.

Makes about a dozen and a half cookies.

  1. I was wondering, why immigration vanilla? I’m new to Paleo so I’ve never heard of any reason not to use the regular stuff. Can you shed some light on that for me?

    • Hi Sarah! I included imitation because some people are worried about the alcohol content (which I think is very minimal). There are some good imitations out there without alcohol, or you might even find a glycerite vanilla.

  4. I just made these cookies and they are the best tasting ones I’ve made so far. I’m just starting to eat Paleo, so I’ve tried several different recipes but these taste exactly like a chocolate chip cookie. Thank you, thank you, thank you for this recipe. Even my husband loves them and that’s saying a lot ?. I’ll have to try some of your other recipes.

  5. You don’t mention agave in the ingredients, are you just using that interchangeably with maple syrup or honey as the sweetener?

  6. My family and I are trying to go on a low-gluten, low-refined sugar diet, and these cookies are AMAZING. I used butter instead of coconut oil due to allergies but omg…these cookies were ridiculous. I made two batches, both of which were finished in the span of a day.

  7. I just tried these yesterday for the first time, I’ve never tried a healthy chocolate chip cookie recipe. I was pretty much preparing to think they are gross, or have my husband (who is very picky about baked goods) think they are gross, or that they don’t taste good. I was thrilled with the results, they are super soft, and truly yummy, the almond flower adds a nutty flavor.
    The only thing I noticed is that my baking time didn’t match the recipe. I’d say mine took between 12-15 mins to bake, but I just watched them until I thought they looked almost ready, and then let them bake for a few minutes on the baking sheet yet. They were perfect!

    • Hi Kimberly! I’m so glad you like the cookies! We’ve been making a couple of batches a week lately, so we are still in love. As for the baking time, I have noticed that different ovens and different altitudes may prompt you to increase time. Glad you found a time that works for you!
