Baby Spinach Hummus

Snacking. Probably what I do the most of every day! And it is super important to make sure I have highly nutritious snacks to keep my blood sugar stable. Today’s quick snack is a baby spinach hummus!

Baby Spinach Hummus 
1 can Garbanzo beans (chickpeas)
1/2 cup +1/8 olive oil
1 handful organic baby spinach
3 medium garlic cloves
1/2 lemon juiced
Put all of the ingredients in a high power blender and blend until smooth. If the hummus gets stuck, just scrape the sides of the blender and keep blending. If it continually gets stuck, add a little more lemon juice or olive oil. 
Serve with chips or fresh veggies! Also great on sandwiches.
