Tonight was a fast meal night. I love taking an hour and making a masterpiece meal, but some days I’m just too tired.
When I was working on my undergraduate degree I often stopped at a little Mexican take out place on campus. Not only was it cheap, it also had some great healthy choices! I was a sucker for their nachos supreme…nachos with all the toppings! We’re talking chips, cheddar cheese, olives, jalepenos, lettuce, tomatoes, salsa…it was amazing! I would usually grab one right before heading to my job in the school’s financial aid call center.
I always made my co-workers jealous.
So this is my version of the nachos supreme recipe:
Ingredients
(Prep and cook 15 minutes)
Non-GMO Corn or Ancient Grain Chips (I used Late July)
1 can black beans
1 tomato
1/4 white onion
3 garlic cloves
4oz can olives
1/2 lime
1/2 Romaine lettuce head
1 avocado
Preheat the oven to 350. Cover the bottom of a pie pan with chips. Drain the black beans and spoon onto chips. If you like spice then dash the chips with a little chili powder. Put chips in the oven for about 5-7 minutes.
Dice all of vegetables and cut the lettuce. Drain and rinse the olives.
Remove the chips from the oven and start arranging the veggies (this is the order I do it in:garlic,lettuce, onion, tomato, olives, avocado).
Squeeze a little lime on top and enjoy!
