AIP Peach Cobbler

- 4 peaches
- 2 tsp cinnamon (divided)
- ½ cup Tigernut flour
- ½ cup arrowroot flour
- ¼ cup coconut butter
- ¼ cup coconut oil
- ⅛ cup maple syrup
- 1 tsp vanilla
- Preheat oven to 350 degrees fahrenheit.
- Peel and slice peaches into small slices. Place on bottom of round, glass pie pan.
- Sprinkle peaches with 1 tsp of cinnamon (reserve the rest for the crust).
- Place glass pan with peaches in oven and bake for 5 minutes while prepping crust.
- Mix all dry ingredients well (tigernut, arrowroot, cinnamon).
- Cut oil and coconut butter into the dry mix.
- Add maple and vanilla and mix with hands or fork until all ingredients are well combined.
- Your dough will be very wet and may not hold together well. That's all right.
- Remove peaches from oven.
- Spread dough with the back of a spoon on top of partially cooked peaches. Be careful not to burn your self!
- Place in oven and bake for an additional 20 minutes. The crust should be stiff and golden brown when done.
