Carob Banana Split

Ingredients
  • 2 ripe bananas
  • 1 can of guar-gum free Coconut milk (chilled for 8-24 hours)
  • 1 tbs maple syrup (or sweetener of choice)
  • 1 tsp vanilla extract
  • 1 tsp Chatfield's Roasted Carob Powder
Instructions
  1. Open can of coconut milk and scrape out the hardened top layer of cream. Put all cream into a bowl.
  2. Add maple syrup and vanilla to coconut cream.
  3. Using a hand mixer, whip cream, maple syrup, and vanilla until peaks form.
  4. Place bananas on plate and scoop coconut cream generously on top.
  5. Sprinkle carob powder over cream.
  6. Enjoy!
