Carob Banana Split

- 2 ripe bananas
- 1 can of guar-gum free Coconut milk (chilled for 8-24 hours)
- 1 tbs maple syrup (or sweetener of choice)
- 1 tsp vanilla extract
- 1 tsp Chatfield's Roasted Carob Powder
- Open can of coconut milk and scrape out the hardened top layer of cream. Put all cream into a bowl.
- Add maple syrup and vanilla to coconut cream.
- Using a hand mixer, whip cream, maple syrup, and vanilla until peaks form.
- Place bananas on plate and scoop coconut cream generously on top.
- Sprinkle carob powder over cream.
- Enjoy!
