AIP Peach Cobbler

Since I went grain-free, I just haven’t been able to create a suitable Paleo cobbler recipe, let alone an AIP compliant recipe! So after buying some Tigernut flour, I finally was able to make an amazing AIP Peach Cobbler.

I really just clued into the idea when I created my AIP Oatmeal Raisin Cookies, because cobblers and crisps are often topped with oats. Which, of course, I can’t eat. But those cookies taste so much like oatmeal cookies that I knew the same flour would be perfect for the biscuity crust of my cobbler. And the reason why they taste so perfectly like oats? Because I use Tigernut flour.

And I was definitely right.

I can’t believe that I never heard of Tigernut flour until I started on the AIP Elimination. It is an excellent flour, substitutes similar to almond flour, and it is sweet tasting, which means less sweetener is needed for every recipe.

I’m in love with Tigernuts. I just started buying the bags of flour from Organic Gemini in bulk cases from Sprouts (PS Both Sprouts and Whole Foods will give you a 10% discount for buying cases of things! Who knew??) because I keep using it so often.

I know that it’s a teeny bit gritty in texture, which turns some people off, but if I can’t have almond flour, then I’ll take a little bit of a weird texture.

I should through some tigernut flour into my blender. I wonder if that would make it finer. I doubt it, but it might be worth a try.

At any rate, it tastes perfect with this AIP Peach Cobbler and makes the most amazing top crust.

AIP Peach Cobbler

Ingredients:

  • 4 peaches
  • 2 tsp cinnamon (divided)
  • 1/2 cup Tigernut flour
  • 1/2 cup arrowroot flour
  • 1/4 cup coconut butter
  • 1/4 cup coconut oil
  • 1/8 cup maple syrup
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees fahrenheit.
  2. Peel and slice peaches into small slices. Place on bottom of round, glass pie pan.
  3. Sprinkle peaches with 1 tsp of cinnamon (reserve the rest for the crust).
  4. Place glass pan with peaches in oven and bake for 5 minutes while prepping crust.
  5. Mix all dry ingredients well (tigernut, arrowroot, cinnamon).
  6. Cut oil and coconut butter into the dry mix.
  7. Add maple and vanilla and mix with hands or fork until all ingredients are well combined.
  8. Your dough will be very wet and may not hold together well. That’s all right.
  9. Remove peaches from oven.
  10. Spread dough with the back of a spoon on top of partially cooked peaches. Be careful not to burn your self!
  11. Place in oven and bake for an additional 20 minutes.  The crust should be stiff and golden brown when done.
  12. Add whipped coconut topping for a really special treat!

  1. This looks really good! I have never heard of Tigernut flour! will definetely check it out. Oh and thank you for the tip about buying in bulk from Whole Foods! I have been shopping there for years and never knew that was possible.

    What can i substitute arrowroot flower with? I have allergies to tapioca.

  3. Not sure what I did wrong here 🙁 It’s been in the oven for 35 minutes now and the top is just slimy, liquidy goo. Any thoughts on what I might’ve done wrong?

    • It shouldn’t be slimy! Was it liquid when you smoothed it out over the peaches? Did you use coconut butter + coconut oil? I’ve made this recipe so many times and had a tester as well and we’ve never experienced this. I would increase the oven temp for 10-15 minutes to get rid of some of that liquid for sure.

      • Ok so I cooked it for about 2.5 times as long as your recipe called for and it turned out AH-mazing!!! Im sure it was my fault it did that because I substituted grass fed butter for the coconut butter and oil. Thanks for the fab recipe! I almost cried when I took my first bite because its been so long since I’ve had a truly satisfying dessert being on AIP.

  4. I have Hoshimotos, which is an autoimmune disease. I have been gluten and dairy free since beginning of February 2017, have lost 52 lbs and am feeling so much better, while keeping my disease in check. I am always looking for recipes that still make me appreciate food, and not like I’m punishing myself. This recipe was delicious, so thank you for sharing!

  5. I make my granola with sliced tigernuts instead of oats and no one can tell the difference! So I’m excited to try this recipe!
