Carob Banana Split

My husband took charge this week and made dessert. Now, this is the guy who puts mustard on mostly everything, so I was a little worried when he told me he made a recipe. Don’t get me wrong, he has come up with some pretty amazing recipes, but one of those was a honey mustard dressing. I’m usually surprised at his choice of ingredients, but for the most part they turn out okay.

Well, his dessert turned out AMAZING. And I am in love. (With the man and the dessert.)

He has the most creative ideas.

That beautiful brown dusting is not chocolate, it’s actually carob! Carob comes from a bean family and has a rich, nutty flavor when put into desserts. It’s Paleo and Vegan, and doesn’t come with the inflammatory side effects that chocolate has.

And it makes beautiful raw desserts.

I haven’t always been a fan of carob, but I’m falling in love with the many ways I can use it. Like in macaroons, or in place of hot chocolate. I’ll definitely be sharing more carob recipes in the future!

Carob AIP Banana Split

Ingredients:

Instructions:

  1. Open can of coconut milk and scrape out the hardened top layer of cream. Put all cream into a bowl.
  2. Add maple syrup and vanilla to coconut cream.
  3. Using a hand mixer, whip cream, maple syrup, and vanilla until peaks form.
  4. Place bananas on plate and scoop coconut cream generously on top.
  5. Sprinkle carob powder over cream.

  • 2 ripe bananas
  • 1 can of guar-gum free Coconut milk (chilled for 8-24 hours)
  • 1 tbs maple syrup (or sweetener of choice)
  • 1 tsp vanilla extract
  • 1 tsp Chatfield’s Roasted Carob Powder
